Blueberry Lemonade Bellini
Sweet and tangy. A refreshing lemon twist for our Blueberry Lemonade Bellini makes this very berry bellini a perfect fruity favorite brunch sipper, because well we love sparkling brunch drinks don't we ladies? I know we do.
Ingredients
- 1/2 cup sugar
- 1/2 cup water
- 2 cups blueberries
- 750 ml Prosecco
- 4-5 Lemons for juicing and slices for garnish
- 4 ozs Blueberry Lemonade Rum | Cruzan® Rum
Instructions
- Place the berries in a small saucepan, pour in water and sugar. Bring to a boil over medium heat, turn heat down and let simmer 10 minutes. Remove from heat.
- Let cool and place in the blender. Pulse until smooth, then strain using a mesh strainer, and return to blender.
- Juice 4 lemons to get about 3/4 cup lemon juice, add lemon juice to blueberry mixture, and stir well. (Use mesh strainer to catch seeds)
- Add 2 cups ice to blender and puree with blueberry lemon mixture.
- Transfer to a large pitcher, pour the blueberry lemon ice mixture, bottle of Prosecco and 4 oz Blueberry Lemonade Rum and stir together and serve with lemon wedge.
