Sweet Fried Plantains

These Sweet Fried Plantains were crispy on the outside, soft inside, and the flavor was perfect! The trick to good plantains is to let them get all the way ripe; which is a lot of black on the skin, that's when they are the sweetest.
Ingredients
  • 1 large plantain
  • 2 Tablespoons Olive Oil
  • 2 Tablespoons Butter
  • 2 Tablespoons Brown Sugar
  • 2 Teaspoons Cinnamon
Instructions
  1. Cut the ends off the plantain and make a slice all the way down the peel to remove. Cut plantain on an angle about pieces about 1/2 inch thick.
  2. Heat Olive oil and butter on medium high to a sizzle, place plantain slices in the the skillet, cook 5 minutes on one side and flip to cook about 3 minutes on the other side.
  3. Sprinkle brown sugar and cinnamon on a plate. Transfer plantain atop sugar cinnamon mixture. Gently smash plantains with the back of spoon into the brown sugar cinnamon mixture, flip to coat the other side and return to skillet for 1–2 minutes per side.
  4. Let cool on rack with paper towels on a plate for a moment.
