Easy Blueberry French Toast Casserole with Streusel Topping
Perfect for a holiday morning or weekend brunch. This Easy Blueberry French Toast Casserole with Streusel Topping is a family favorite that is oh so easy to make.
Ingredients
- 1 large loaf french bread, day-old challah or sourdough bread (cut into 1 1/2 inch cubes)
- 8 large eggs
- 2 and 1/4 cups whole milk
- 1/4 teaspoon salt
- 1/2 cup sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla extract
- 2 cups fresh or frozen blueberries
- 1/3 cup brown sugar
- 1/3 cup flour
- ½ tsp cinnamon
- 6 tbsp unsalted butter, cold and cubed
Streusel Topping:
Instructions
- Grease a 9 x 13 inch pan with butter or cooking spray.
- Cut the bread into cubes, about 1 1/2 inch in size.
- In a large bowl, whisk the eggs, add the milk, cinnamon, salt, sugar and vanilla.
- Add the bread cubes and mix until coated and add blueberries.
- Let stand 30 minutes or cover tightly with plastic wrap refrigerate up to overnight.
- Prepare the topping by whisking the brown sugar, flour, and cinnamon together in a medium bowl. Cut in the cubed butter with a pastry blender or a fork.
- Sprinkle Streusel Topping just before baking
- Place an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
- Bake for 50-60 minutes or until golden brown on top. Let cool a few minutes before serving.
- Spoon onto serving plates and drizzle with maple syrup.
