Crunchy Watermelon Jicama & Cucumber Salad

Super healthy, light, and refreshing. This Crunchy Watermelon Jicama & Cucumber Salad is a perfect side dish for a weekend party, or any summer meal for that matter.
Ingredients
  • 1 medium Jicama (chopped into matchstick size)
  • 2 cups watermelon (cut into 1 inch squares)
  • 1 cucumber (quartered and sliced)
  • 1 tablespoon mint leaves (small dice or cut julienne style)
  • 2 teaspoons chili powder
  • 1/2 teaspoon sea salt and fresh cracked pepper
  • 2 limes juiced and zest from 1 lime
Instructions
  1. In a bowl mix together Jicama, watermelon and cucumber.
  2. Whisk together lime juice, chili powder, salt, pepper pour over salad and toss to combine.
