30-Minute Taco Spaghetti
Quick easy and full of flavor, that's what I like for a busy weeknight dinner, and this Taco Spaghetti recipe comes together in under 30 minutes. the perfect no fuss, quick clean up dinner.
Ingredients
- 1 pound extra lean ground beef (or turkey)
- 1 small onion (diced)
- 1 package taco seasoning mix or (3 tablespoons)
- 1 can (10 oz each) RoTel Diced Tomatoes & Green Chilies (undrained)
- 8 ounces Spaghetti, uncooked
- 3 tablespoons reduced fat sour cream
- 1/2 cup shredded cheddar/jack cheese
- 2 tablespoons chopped fresh cilantro leaves
- 2 green onions (diced)
Instructions
- Cook pasta according to package instructions, drain, cover and set aside.
- In a large skillet cook ground beef (breaking up into crumbles) add diced onion and cook over medium-high heat until no longer pink. Drain excess fat and return to skillet. Add taco seasoning and RoTel. Stir to combine. Simmer for 5 minutes.
- Stir in cooked spaghetti and top with shredded cheese and garnish with cilantro, green onions and sour cream.
